Ingredients:
3 tablespoons of Extra Virgin Olive oil
Large piece of ginger, chopped
Organic Rice noodles (Chinese supermarket)
200gr of Tofu (Tofuking 600gr, Chinese supermarket) Cubed
5cm length of sliced & chopped leek
1 bell pepper de-seeded and sliced and chopped
Bunch of Kale
Tamari Soy Sauce
Vegetarian Stir Fry Sauce (Chinese supermarket)
Sesame seeds
Seed Mix;
(linseed, pumkin seeds, pine nuts)
Instructions:
Boil some water and then add the noodles.
Place all the oil into a wok and heat on high, add the cubed tofu and stir-fry until browned add the sesame seeds, add the tamari sauce until covered.
Add the rest of the veg apart from the ginger, keep it moving so it doesn’t stick.
Drain the noodles and add to the Wok, add the stir-fry sauce. (Add as much as you like but too much may over-power the taste of the vegetables).
Remove from the wok into a large high bowl and add the ginger and seed mix on top.
This is good nutritious ideal for one person and is cheap, it should cost know more than £2 per meal. Kale adds calcium, the tofu adds protein, the ginger is a very good anti-oxidant and the seeds have lots of good properties.
